Freedom Bagel Bakery is set to expand with a new location on Meridian Road, as revealed by documents filed with the City of Meridian. The new site will be situated at the intersection of Meridian Road and McMillan Road.
John Heintzberger, the owner of Freedom Bagel Bakery, noted that the current location on Eagle Road has become insufficient due to the business’s rapid growth since opening nearly two years ago. “We’ve had super positive feedback since we’ve opened, and it’s almost been about two years, and we’ve fairly rapidly outgrown this space here,” Heintzberger stated.
The new building will feature a larger kitchen, enhancing the bakery’s production capacity. Additionally, its proximity to residential areas in Eagle and Star will cater to a broader customer base. “We just feel like it would be a good spot to make more of a cool neighborhood bagel shop kind of vibe where people can come, and that’s kind of what we’ve geared this place to be,” Heintzberger said. “We have a lot of fun regular customers we’ve really gotten to know, and I like that vibe of it.”
The planned structure will encompass 4,485 square feet, accommodating two additional tenants. Freedom Bagels will occupy 1,745 square feet, with the remaining 1,120 and 1,130 square feet designated for the other tenants. These dimensions are subject to change. The new location is also expected to feature a spacious outdoor patio and an expanded coffee service area. “I’d like to get our espresso machine up front and be a little more interactive on the coffee side, which, right now, we just don’t have a space to do,” Heintzberger explained. “So we’re trying to just kind of expand our concept and really create a design that’s fun and hopefully just kind of fits what we’re trying to do.”
Plans for the existing Eagle Road location are still under consideration, Heintzberger added.
