Mighty Fine Donuts Expands Hours, Opens on Mondays.
Mighty Fine Donuts, located at 2612 Parade St., is now open on Mondays, extending their operation to six days a week.
Shari Robinson, co-owner of the doughnut shop, highlighted the recent changes in staffing. “Doug Robinson has been working hard to expand our team,” she said. “Initially, we had a 10-person crew, each with specific roles. Now, Doug has grown the team to 22, with everyone trained in multiple tasks.”
The increase in staff has allowed Mighty Fine Donuts to maintain their high standards. “We’ve more than doubled our staff since taking over,” Robinson added. “With cross-training, anyone can step in when needed, ensuring our doughnuts remain consistently delicious.”
Previously, Mighty Fine Donuts operated from Wednesday to Sunday, from 5 a.m. to 5 p.m. Starting September 16, the shop has added Monday hours, now open from 5 a.m. to 1 p.m.
While there are no immediate plans to extend hours to seven days a week, Robinson indicated that this is a future goal. “We aim to eventually open every day, including Tuesdays,” she said. “However, we need to ensure we have the right staff and resources before making that leap.”
Robinson also mentioned that there are no plans for 24-hour operation at this time.
In addition to extending their hours, Mighty Fine Donuts has been working on other improvements. “We’ve been updating our equipment and getting our staff ready,” Robinson noted. “Now, we’re preparing to launch bigger ideas, though the details are still being finalized.”
Despite these changes, Robinson assured that the beloved doughnut recipe will remain unchanged. “Mighty Fine Donuts is a staple in Erie,” she said. “We cherish the memories and taste that have made our doughnuts famous. We’re excited about the future while honoring our past.”
