If it’s a boozy bacon donut grilled cheese you’re craving, you’re in luck.
Hico residents Clayton Brewer and Jordain Williams, owners of Brewer Concessions, have perfected the winning recipe and will soon be sharing it with the public for the first time.
The unique dish, which consists of a baked glazed donut (sliced lengthwise) filled with jalapeño jack cheese and topped with crumbled bacon and a homemade bourbon maple glaze, won the “Between the Buns” category at last year’s Texas Food Truck Showdown at Bacon Fest.
The dish has been so popular at various food competitions across the state that it will be offered to the public for the first time in June at the city of Stephenville’s annual Moo-La Fest.
“It’s been quite a journey,” Clayton told Beneath the Surface News.
“We were invited to Bacon Fest and had no idea what to make. I woke up one morning and said we’re going to make a boozy grilled cheese donut; I have no idea where that came from.”
“The first time I made it was at 8 a.m. on Bacon Fest.”
Clayton said the judges gave a lot of positive feedback on the dish.
“Most people said it was a great hangover treat,” he said.
Brewer Concessions, which opened in 2022, features Smash burgers, lemonade, sorbet and cinnamon roasted nuts (which won the People’s Choice Award at this year’s Fort Worth Livestock Show and Rodeo).
